		<description>I know that lightly steaming carrots and other vegetables is the best way to retain more nutrients if you want them cooked.  Raw is best because you won&#039;t be killing the enzymes in the cooking process.  I prefer the taste of cooked carrots but know that raw is best for me.  You could make a shredded carrot salad!  That is a pleasant way to eat raw carrots.  =)</description>
