I’ve decided that I have great intentions of blogging but when it comes down to it, I choose to do other things with my time. That’s just what I prefer. However the blog is not completely dead. I’m just not an everyday blogger.
It’s been a long haul, but the worst is over now. Still having bad days but overall, I feel sooo much better. The twins are probably glad to have the chipper me back. We’ve been playing outside a lot and going up to Noni and Grandpa’s. My mom’s garden is bursting with color and fragrances and it’s just too hard to stay away from. This week I took the kids up there and spent the whole day relaxing in the courtyard and sipping on coffee. The kids played with stones and water while I sat on the porch swing soaking in the breeze. They have been doing so great playing together! It’s so nice to know that when I really need to I can sit down now and tell the kids to go play and they do. We don’t have a lot of toys to play with in the back yard but I just got a little kiddie pool and they love it!
Also, my appetite is back and I have been eating and desiring good nutritious food. I want a huge salad every night. I use my homemade vinaigrette as my dressing, add tomatoes and goat cheese, and I feel like I’m eating like a queen. It’s nice to not want the bad stuff anymore. I think I’m still consuming too much sugar compared to my unpregnant self, but not like I was a few months ago.
My dear friend Dana also suggested I do a post on my homemade pancakes. I need to wait til the next time I make them so I can get exact measurements because right now I just know approximate measurements. I’ll just let you know that they turn out moist and crispy on the edges! And you can make them as brown and grainy or as white as you want. Go ahead and get some organic extra virgin coconut oil to have on hand because I believe that’s the secret to the unique taste of the pancakes.
As soon as I’ve sorted through my most recent pics, I’ll post some updated pics of the kids and me! For some reason, Josh hardly ever makes it into the photos, but I’ll track some down.
